Atelier Home Gallery, il 14 aprile appuntamento con il laboratorio di cucina con Goran Zgrablic
Nel secondo appuntamento con il laboratorio di cucina in Atelier, lo chef Goran Zgrabli? ci farà conoscere i sapori delle piante selvatiche che da sempre giocano un ruolo importante nella cucina primaverile istriana.
Una cucina povera, ma che da sempre ha saputo usare il bosco e i campi come fonte di sapore e salute.
Impareremo ad utilizzare al meglio l'asparago, il radicchio e il finocchietto selvatico, l'aglio orsino e il pungitopo, per creare tre portate dai toni verdi e dal carattere primaverile:
- Insalata con radicchio selvatico, patate e vino terrano di Trapan
- Minestra istriana con verdure croccanti selvatiche
- Gnocchi di patate con asparagi selvatici
La serata sarà accompagnata dai vini del produttore Bruno Trapan che spaziano dalla malvasia istriana (Ponente e Uroboros) al terrano (Terra Mare), al syrah (Shuluq) e uvaggi di vari vitigni (cabernet sauvignon, merlot, syrah e terrano) come il Nigra Virgo Revolution. La sua cantina si trova a Sisano nell'entroterra della città di Pola in Istria, Croazia.
Gli artigiani di Monolithvm, inoltre, metteranno a disposizione dei partecipanti gli esclusivi taglieri monoblocco nei pregiati legni di noce, ulivo e teak.

Oltre ad avere un dottorato in fisica dei laser, Goran Zgrabli? è anche un buongustaio errante e un appassionato amante del vino con un titolo di sommelier ottenuto presso l'Associazione Italiana Sommelier. In precedenza ha vissuto in Svizzera per cinque anni e attualmente divide la sua vita tra Trieste, dove lavora al Sincrotrone, e la sua città natale Pola, in Istria. Goran è autore di Manjada, un blog dedicato all enogastronomia Istriana, e uno dei fondatori del Taste of Croatia, la guida gourmet indipendente alla Croazia. Quattro anni ha formato EatIstria, un progetto che offre corsi di cucina tradizionale e visite alle cantine a tutti i curiosi visitatori dell'Istria che vogliono scoprire il vasto mondo enogastronomico di questa penisola.

Love, energy and courage are the main drivers of the winery Trapan. Since 2005 to this day with hard work and perseverance, we have created 12 hectares of ecologically clean vineyards. The learned knowledge and experience we transfer into the winery creating fine and elegant wines of a specific character, recognizable, with a special Mediterranean touch. Defying tradition and using modern knowledge we have created a renowned range of wines. Using the full potential of indigenous varieties and believing in their maximum efficiency, we decided to make the first extra brut Non dosage rose sparkling wine of the teran, a revolution in our winery, symbolically named Che. Bleeding our red varieties (cabernet sauvignon, merlot, syrah and teran) combined with juices from lightly pressed grapes of teran, we create a rose, Rubi, dedicated to our oldest daughter. It is a fresh, mineral wine that perfectly fits on hot summer days. Terra Mare is a wine made from 100% teran grapes and is dedicated to our younger daughter. As with all our wines, teran has a specific line and a modern character. Although it retains its originality, this is an atypical teran. Of malvasias we do a fresh - Ponente, and one aged in barrels of acacia - Uroboros. From single variety reds besides teran we grow syrah and make a wine called Shuluq. It's name originates from Arab, and bears the name of the south, warm wind that blows in this area, also known as the Jugo or Scirocco. The terroir of southern Istria is extremely suitable for the success of this variety and the wine from the Syrah grapes is intense, full, with ripe tannins and great balance of body and aromas. For this wine we like to say that is our pride, the realization of our vision of aged red wines in style of Cotes du Rhone. We are especially proud of our red blend - Nigra Virgo Revolution. It is from grapes of cabernet sauvignon, merlot, syrah and teran. Revolution - because it carries our character, Nigra Virgo - because it's soft and velvety, yet tough and enduring, just like a women. Reflecting on the range of our products, we decided to include another wine - Dark Rose. It is a semi-sweet red wine made from dried grapes of Muscat rose.
